Pocket Full of Yum
A pita packed with chicken, veggies and a delicious low-fat dressing is perfect for lunch or an easy, light dinner
Cut the calories and fat in mayonnaise by mixing the low-fat variety with fat-free yogurt, then spice it up with a little garlic and you'll have a gourmet delight that's excellent with tuna, burgers or, in this case, inside chicken pita pockets. Feel free to expand the veggie selection here to your liking. Try adding sprouts, fresh cucumber or spinach for even more flavor and crunch.
Chicken Pita Pockets with Garlic Mayo
Ingredients
2 small garlic cloves, minced
1/8 tsp. salt
1/2 c. low-fat mayonnaise
3 Tbsp. fat-free plain yogurt
2 (7- to 8-inch) whole-wheat pitas
2 cooked boneless, skinless chicken breast halves
2 medium tomatoes, sliced
4 lettuce leaves, torn into bite-size pieces
Directions
1. Mash garlic and salt together to a pulp with a fork.
2. Place in a bowl. Stir in mayonnaise and yogurt.
3. Split pitas into two half circles. Spread half of garlic mayonnaise in each half pita pocket. Thinly slice chicken.
4. Arrange half the chicken in each pita pocket. Add tomato slices and lettuce.
Makes 4 servings.
