Enjoy summer's fresh berries with this low-guilt dessert
2 ½ cups fresh berries (raspberries, blackberries or blueberries)
1 cup sugar
1 cup white whole-wheat flour
2 teaspoons baking powder
½ teaspoon salt
1 cup soy or rice milk
½ cup margarine, melted
In medium bowl, stir together berries and sugar and let stand about 20 minutes or until fruit syrup forms. Heat oven to 375 F.
In large bowl, stir together flour, baking powder, salt and milk. Blend in margarine. Spread in ungreased 8-inch square pan. Spoon berry mixture over batter. Bake for 45-55 minutes. Can be served warm or cold, but be sure to refrigerate any leftovers.
