Crab Salad with Tomatoes, Peppers and Cheese
Serve this salad at your next summer soiree
Crab is a great source of protein and vitamin B12, the latter of which can have positive effects on both energy and mood. Tomatoes and peppers are packed with the antioxidant vitamin C, and there's no time like now to enjoy them—they're at their peak-of-season tastiest.
¼ c. reduced-fat mayonnaise
¼ tsp. paprika
1 lb. tomatoes
1 red bell pepper
½ lb. cooked crab meat (or imitation crab)
½ c. shredded reduced-fat cheddar cheese
2 Tbsp. fresh lemon juice
½ tsp. pepper
Combine mayonnaise and paprika; set aside. Dice tomatoes into large chunks. Slice bell pepper, then cut into 1-inch pieces. Combine tomatoes, bell pepper and remaining ingredients. Serve salad over a bed of greens, garnished with mayonnaise mixture.
