Craving a Pumpkin Spice Latte? Love your favorite fall drink on the lighter side.

Pumpkin Spice Latte Lite

  • 2 Tbsp. pumpkin puree
  • 1/8 tsp. pumpkin pie spice
  • 1 Tbsp. brown sugar, packed
  • 1 cup unsweetened vanilla soy milk (or unsweetened vanilla almond or skim milk)
  • 1 tsp. vanilla
  • 1/4–1/2 cup pumpkin spice coffee, strong brew

In a small saucepan over medium heat, cook and stir together the pumpkin puree and pumpkin pie spice for 30–60 seconds; add the brown sugar and stir until smooth and starting to bubble, another 30 seconds.

Slowly whisk the milk into the pumpkin mixture; then add vanilla. Continue to stir until hot (but not boiling), about 2 minutes.

Pour contents of the saucepan through a fine mesh strainer into a large coffee mug. Add the brewed coffee and stir.

Optional: small dollop of fat-free whipped topping and a sprinkle of freshly-ground nutmeg. If you prefer it sweeter, mix in a little Stevia.
